There are many great things about having adult-aged children (picture of mine below from last summer), and one of the greatest is when they visit. When they leave has its merits too, but that's another story. My daughter is home for just a few weeks before starting summer semester at CU in Boulder after her winter semester spent snowboarding, and I'm loving the girl time with her. One of the other thrills for me is that she's really becoming interested in cooking (finally - I didn't think any of my kids got the cooking gene from me!) and she's gaining confidence in putting things together on her own to create recipes.Yesterday she ended the cleanse diet she was on and went back to some of her favorites, so making guacamole was high on her list. I've only seen her make it before using one of those powdered seasoning packets, so when I tasted how great this was and learned she had created the recipe on her own, I had to share it with all of you! The only thing I'd add they she doesn't is a little minced fresh cilantro and maybe a little lime zest or juice.Got kids? Get cooking with them today, regardless of their age!

Guacamole by Jenny
Serves 6

1/2 cup onion
1/2 cup red pepper
2 whole avocados, mashed
1 small tomato, diced fine
1/2 teaspoon garlic powder
salt and pepper, to taste

Roughly chop the onion and pepper, then finely mince using a food processor. Combine with the mashed avocado, diced tomato, and garlic powder. Season with salt and pepper to taste.
